Liquor and Beer Shop · −18 to −60 °C

Deep Freezer for liquor and beer shop

A hard-top chest freezer for packaged ice cubes and frozen snacks, kept separate from beer stock that should never go into a freezer.

Many beer shops also sell bags of ice, which customers buy with chilled beer. A hard-top chest freezer keeps packaged ice hard at −18 °C or colder and holds it through short power cuts. It should be used only for frozen products: putting beer or soft drinks in it to chill them quickly risks frozen and burst cans and bottles. Keeping the freezer for ice alone makes stock control and cleaning simple.

How to configure it

  • Keep the freezer at −18 °C or colder so ice bags do not fuse into one block.
  • Stock ice bags flat and below the load line.
  • Place the freezer near the counter so staff can hand ice over quickly with the lid open briefly.
  • Defrost periodically when wall ice builds up.

Mistakes to avoid

  • Using the freezer to flash-chill beer, which can freeze and burst bottles and cans.
  • Putting the freezer in the sun at the shop front, where it runs constantly.
