Hard-Top Deep Freezer for Commercial Use
A hard-top deep freezer is a chest freezer with a solid, insulated lid that opens upward. It holds frozen stock at −18 °C or colder. It is the simplest and most efficient way to keep large quantities frozen. The thick foam walls and solid lid limit heat gain, and because cold air is heavier than warm air, it stays in the chest when the lid opens instead of spilling out as it does from an upright door. That also makes a hard-top the best of the freezer types at riding out a power cut. Lids are usually lockable and counterbalanced so they stay open while you load.
Best for
- Restaurants and hotels holding bulk frozen meat, fish, vegetables and ready-to-fry stock.
- Ice-cream and frozen-dessert distributors keeping back stock.
- Bakeries storing frozen butter, doughs and fruit purées.
- Shops and outlets in areas with long or frequent power cuts.
Before you buy
- Energy: BEE runs a star-labelling programme for chest deep freezers. Compare the label and the rated energy figures when you choose, as a hard-top runs around the clock.
- Ambient and placement: check the ambient rating and leave the clearances the manual asks for around the body and grille. Many chest freezers shed heat through their walls, so don't box them in.
- Coastal and humid sites: salty, humid air corrodes coils and cabinets. Ask how the condenser and body are protected, and keep the unit off a wet floor.
- Organisation: deep chests bury stock. Use baskets and dividers, label and date everything, and keep a written list on the lid so it isn't held open while someone searches.
- Defrost and cleaning: most hard-tops use manual defrost. Defrost when ice gets thick, usually in a cool, quiet period. Keep the lid gasket clean, or ice builds quickly in the monsoon.
How it compares within the range
In the deep-freezer family, the hard-top is the storage specialist. A glass-top chest trades some insulation for a see-through lid that lets customers pick stock themselves. That is excellent for selling ice cream, but it uses more energy and the glass fogs in humid weather. An ultra-low temperature freezer goes far below normal frozen storage, to −60 °C. It is for specialist seafood, pharma and lab uses, and costs more to buy and run. Choose a hard-top whenever the stock doesn't need to be on show and doesn't need ultra-low temperatures.
Questions
- How long will a hard-top deep freezer stay frozen in a power cut?
- It varies with how full it is, the ambient temperature and the insulation. A full, closed chest holds frozen far longer than a half-empty one or an upright. Keep the lid shut, and check the stock temperature when power returns.
- Should a chest deep freezer be kept full?
- A fuller freezer holds temperature better through openings and outages. Don't block the vents or overload it with warm stock in one go. Freeze in batches.
- Can a hard-top freezer run as a chiller?
- Some chest units offer a freezer-or-cooler setting. Check the specific model. A standard deep freezer is built to run below −18 °C and shouldn't be used as a chiller.
