Glass Door Refrigerator / Visi Cooler for sweet shops and mithai stores
Upright display for sweets in syrup and dairy items: rasgulla and rasmalai bowls, rabri cups, dahi and bottled lassi.
Rasgulla, rasmalai and gulab jamun sold cold sit in syrup or milk in tins and bowls, and rabri, dahi and lassi are sold in cups and bottles. These do not suit flat display trays but sell well when customers can see them. A glass-door cooler holds them upright on shelves, at food-safe temperatures, in a small floor space. Because rasmalai and rabri are as perishable as milk itself, the cooler should be set for dairy rather than drinks, and stock should be rotated by date.
How to configure it
- Set the cooler for dairy, at or below about +5 °C, not for soft drinks.
- Keep rasmalai and rabri on the coldest shelves.
- Cover tins and bowls so syrups do not pick up odours or dry at the surface.
- Rotate stock by making date, with older items at the front.
Mistakes to avoid
- Using the sweets cooler to chill crates of soft drinks before festivals.
- Placing the cooler near the frying area for jalebi and samosa, where it faces heat.
