Undercounter Refrigerator for cafés and coffee shops

The barista's milk fridge under the espresso machine, and the cold station for cold-brew, cut fruit and yoghurt.

Milk is opened for nearly every drink, so its fridge has to be at the barista's knees, not in the back. An undercounter unit beneath the espresso counter keeps several litres of milk, oat or almond alternatives and cream cold within reach, and its worktop holds the grinder or the machine itself if the unit is rated for it. During a morning rush the door or drawer opens every minute, so fast recovery matters, and because café bars are closed counters, front-breathing ventilation is essential. A second unit at the cold-drinks station keeps cold-brew concentrate, cut fruit, yoghurt and shake bases separate from milk. Undercounter units also keep the bar looking tidy: nothing perishable sits on display behind the barista.

How to configure it

  • Place it directly beneath or beside the steam wand, with the door or drawers opening toward the barista.
  • Use drawers for milk cartons so they stand upright and the barista can grab them without bending into a shelf.
  • Choose front-breathing units, since espresso counters are almost always closed panels.
  • Separate dairy milk from plant-based alternatives on clearly marked shelves to avoid mix-ups with customers' allergy requests.
  • Check the worktop load rating before placing an espresso machine on top of the unit.

Mistakes to avoid

  • Keeping open milk jugs on the counter between drinks during a rush.
  • Placing the undercounter beside the espresso machine's hot water outlet or boiler side without a gap.
