Undercounter Refrigerator for restaurant kitchens (fine and casual dining)
Station-level cold storage under the tandoor, curry and cold stations, so each cook works from arm's reach during service and refills from the reach-in.
During a dinner rush the time and heat lost walking to a back fridge add up quickly. An undercounter or worktop unit under each station holds just the service quantities that station needs: tikka and seekh mince at the tandoor, gravies, cream and paneer at the curry range, raita, salad and dessert parts at the cold counter. Because it is opened constantly, it must recover fast in hot air, and because it sits in a counter run, it must breathe from the front rather than needing gaps at the back and sides. Drawer versions are especially useful in Indian kitchens, where many small containers are pulled dozens of times an hour; a drawer exposes only its own contents and keeps pans at eye line. A worktop or chef-base top also gives the line extra prep or equipment space in a kitchen where every metre counts.
How to configure it
- Use drawers at the tandoor station so a shallow drawer of marinated tikka can be opened without exposing everything else.
- Choose front-breathing units for a tight counter run; rear-breathing cabinets pushed against a wall near the tandoor will choke on hot air.
- Use a chef-base version, built to carry a griddle or tawa on top, where the line has no other place for cooking equipment.
- Set line units near the lower end of the band at the start of service, since door openings will lift the air temperature during the rush.
- Match the worktop height to the rest of the counter run so it works as a continuous chopping or plating surface.
Mistakes to avoid
- Using line units as overnight bulk storage. They are sized for one service; move leftovers back to the reach-in at close.
- Placing a solid-top undercounter under a hot appliance it is not rated to carry, which heats the cabinet from above.
- Leaving drawers half closed during the rush, which lets warm kitchen air flow straight across open food pans.
