Reach-in Refrigerator for restaurant kitchens (fine and casual dining)
Bulk chilled storage in the prep area: raw meat, marinated batches, base gravies, dairy and vegetables before they are portioned out to the line.
The reach-in is where the morning's prep lands and where tomorrow's stock waits overnight, so it needs volume and uniform temperature more than speed. An upright two- or three-section cabinet gives a dining kitchen separate compartments for raw non-veg, veg and dairy, and cooked bases, which makes segregation a matter of which door you open rather than which shelf you remember. Half doors help here: the cook pulling a tub of makhani base does not dump the cold from the section holding chicken. Because it sits in the prep or store area rather than on the line, it can be placed away from the tandoor and range, which is the single biggest factor in how hard it has to work in summer. A dual-temperature or convertible build can carry a small freezer section for a kitchen too tight for a separate chest freezer.
How to configure it
- Choose half doors on a two- or three-section cabinet so each opening only exposes the compartment you need.
- Assign sections and label the doors: raw non-veg, veg and dairy, cooked bases. New staff follow labels, not verbal instructions.
- Plan shelving around the containers you actually use, whether gastronorm pans or the 5- and 10-litre food-grade tubs common in Indian kitchens.
- Place it in the prep or store area, away from tandoor and range heat, and leave the clearance around the condensing unit that the installation manual asks for.
- In areas with frequent evening voltage dips, run it from its own socket with suitable voltage protection rather than a shared extension board.
Mistakes to avoid
- Loading gravy straight from the kadhai. It warms everything around it and overloads the compressor; cool it first in shallow containers.
- Packing shelves edge to edge so air cannot circulate. The display reads fine while back corners sit several degrees warmer.
- Buying one large single-door cabinet for everything, so every trip for coriander also warms the raw chicken.
The reach-in range
Upright stainless cabinets in one-, two- and three-section builds, with full or half doors. Refrigerator, freezer, dual-temperature and convertible versions share the same body, so a kitchen can standardise on one footprint and one set of spares.
