Reach-in Refrigerator for fruit and vegetable store
A back-counter upright chiller for reserve greens, mushrooms and berries and for prepped cut fruit waiting to go into the showcase.
A produce store's display cooler is opened constantly and cannot also hold the day's reserve stock. A stainless reach-in behind the counter keeps reserve exotic vegetables and berries cold, lets staff pre-cool stock that arrives warm from the mandi, and holds prepped cut fruit safely until it goes into the display. Stainless interiors can be cleaned of fruit juice and soil easily, which keeps the cabinet hygienic.
How to configure it
- Hold it at about +2 to +4 °C for greens and cut fruit; keep chill-sensitive produce out.
- Store produce in covered crates or perforated bags to limit drying.
- Keep cut fruit and salads on upper shelves, above any unwashed produce.
- Pre-cool morning deliveries here before moving them to the display.
Mistakes to avoid
- Mixing unwashed, soil-covered produce on the same shelf as cut fruit.
- Packing crates tightly to the back wall, which blocks airflow and leaves the middle warm.
The reach-in range
Upright stainless cabinets in one-, two- and three-section builds, with full or half doors. Refrigerator, freezer, dual-temperature and convertible versions share the same body, so a kitchen can standardise on one footprint and one set of spares.
