Reach-in Refrigerator for cloud kitchens

The shared bulk store for all brands: raw meat, prepped bases, dairy, vegetables and the next day's mise en place.

An upright reach-in gives the most storage per square metre of floor, which is exactly what a cloud kitchen pays for. It holds the morning's prep for every brand and the raw stock delivered by suppliers, so it must keep a uniform temperature when fully loaded, not just when empty. Two or three sections let the kitchen keep raw non-veg, veg and dairy, and cooked items apart, which is the backbone of food-safety discipline in a multi-brand kitchen. Half doors reduce the cold lost when someone pulls one tub during a rush. A dual-temperature build can provide a small freezer compartment if floor space does not allow a chest freezer.

How to configure it

  • Choose two or three sections with half doors, and assign each section a food type rather than a brand.
  • Leave clearance above and around the condensing unit; enclosed kitchens often push reach-ins hard against walls and ceilings.
  • Keep raw non-veg on lower shelves or in its own section, with covered containers and drip trays.
  • Position it near the goods entry, so supplier deliveries go straight in without crossing the cooking line.

Mistakes to avoid

  • Putting the reach-in at the end of the cooking line beside the fryers because that is where space was left.
  • Loading supplier deliveries without dating them, so older stock is pushed to the back and forgotten.

The reach-in range

Upright stainless cabinets in one-, two- and three-section builds, with full or half doors. Refrigerator, freezer, dual-temperature and convertible versions share the same body, so a kitchen can standardise on one footprint and one set of spares.
