Reach-in Refrigerator for meat shop

A stainless upright chiller behind the counter that holds fresh chicken, mutton and offal in covered trays at the coldest end of its range between delivery and sale.

Fresh cuts need to be kept close to 0 °C and protected from heat, dust and flies, and an upright stainless cabinet does this in the smallest floor space. Solid doors hold cold far better than a display in a hot, open-fronted shop, and stainless interiors can be washed down every night. Half doors suit a busy counter because staff open only the section they need. The dual-temperature build gives a shop a chiller and a freezer in one footprint if floor space is tight.

How to configure it

  • Set it to the bottom of its band, around +2 °C, and check meat temperature with a probe, not the display.
  • Hold meat in covered stainless or food-grade trays with lips that contain drips.
  • Keep raw meat on lower shelves and marinated or ready-to-cook products on separate shelves above.
  • Choose half doors on a busy counter so staff open only the section they need.
  • Clean and sanitise shelves and gaskets daily; blood residue on gaskets breeds bacteria and odour.

Mistakes to avoid

  • Hanging or stacking meat directly on shelves without trays, so juice drips through to everything below.
  • Hosing the cabinet during washdown, which drives water into the controls and the base.
  • Overloading the cabinet just before a festival rush so air cannot circulate and the centre stays warm.

The reach-in range

Upright stainless cabinets in one-, two- and three-section builds, with full or half doors. Refrigerator, freezer, dual-temperature and convertible versions share the same body, so a kitchen can standardise on one footprint and one set of spares.
