Refrigeration for meat shop
A meat or chicken shop handles a product that spoils quickly and carries real food-safety risk if it is held warm. Many Indian shops sell fresh cuts the same day, but stock still has to be held between deliveries and through the afternoon, and more shops now sell marinated, ready-to-cook and frozen lines that need proper refrigeration. The equipment has to keep raw meat cold, separate it from anything ready to eat, stand up to daily washdowns, and work in a shop that is often open-fronted and hot. Food-safety expectations, including FSSAI hygiene requirements, mean the refrigeration is part of the shop's licence-holding routine, not an optional extra.
What the equipment has to cope with
- Fresh meat and poultry need to stay close to 0 °C, colder than many general-purpose cabinets are set, and they lose quality quickly when held warm.
- Shops are washed down daily, and water and cleaning chemicals around a cabinet's base and controls cause corrosion and electrical faults.
- Blood and meat juice drips must be contained so they cannot contaminate other products or pool inside the cabinet.
- Open-fronted shops face heat, dust and flies, so doors must stay shut between servings and seals must stay tight.
- Raw meat, marinated products and any ready-to-eat items need clear separation to avoid cross-contamination.
Typical temperatures
| Fresh chicken and mutton cuts | 0 to +4 °C |
|---|---|
| Mince, liver and other offal | 0 to +4 °C, shortest hold |
| Marinated ready-to-cook packs | 0 to +4 °C |
| Frozen meat, sausages, kebabs | −18 °C or colder |
Equipment
What to buy, and why.
A typical meat shop needs a stainless upright chiller behind the counter for fresh cuts held in covered trays, a chest freezer for frozen lines and any stock that is sold frozen, and, if the shop sells packed ready-to-cook products, a glass-door cooler for those packs. Keep raw meat on the lowest shelves and anything ready to eat above or in a separate cabinet. Position cabinets away from the cutting block and washdown area so they are not splashed, and put them on dedicated, earthed sockets. Record cabinet temperatures each morning and evening; it is the simplest evidence that your cold chain works.

Questions
- What temperature should a meat shop chiller run at?
- Fresh meat and poultry are best kept between 0 and +4 °C. Set an upright chiller to the coldest point of its range and check it with a probe thermometer in the product, not just the air reading. Mince and offal spoil fastest, so sell them first.
- Can raw chicken and mutton share one cabinet?
- They can share a cabinet if each is in its own covered tray and nothing drips onto the other. Many shops prefer separate shelves or separate units for chicken, mutton and marinated products. Ready-to-eat items should never sit below raw meat.
- How do we keep refrigeration safe during daily washdowns?
- Keep cabinets out of the direct wash zone, wipe them rather than hosing them, and never spray water at the controls, grille or socket. Use earthed outlets and switch off before deep cleaning inside. Stainless exteriors handle cleaning chemicals far better than painted steel.
