Dual-Temp Reach-in Refrigerator Freezer Guide
A dual-temp reach-in is one upright cabinet with two separate compartments. One holds chilled stock around +2 to +8 °C, and the other holds frozen stock at −18 °C or colder. Each compartment has its own door and its own temperature control, so opening the chiller does not warm the freezer. It solves a common problem in Indian kitchens: there is room for one upright cabinet, but the menu needs both chilled and frozen stock close at hand. Two compartments in one footprint also mean one installation, one power point and one cabinet to clean around.
Best for
- Small restaurants, cafés and cloud kitchens with room for only one upright cabinet.
- Satellite stations, such as a pantry or banquet kitchen, that need a little of both chilled and frozen stock.
- Hotel room-service and staff canteens holding modest quantities of frozen desserts alongside chilled items.
- Kitchens that want frozen backup stock right beside the chilled working stock.
Check before you buy
- Split ratio: check how the volume divides between chilled and frozen, and match it to what you actually store. A kitchen that is mostly chilled stock wastes freezer space if the split is equal.
- Refrigeration layout: ask whether each section has its own compressor. With separate systems, one section keeps running if the other fails. That matters when a breakdown happens on a Saturday night.
- Ambient and power: two duties in one body means more heat rejected into the kitchen. Confirm the ambient rating, keep the condenser clear, and give it a dedicated earthed 230 V socket with voltage protection.
- Humidity and defrost: the freezer side frosts faster in the monsoon. Check that it defrosts automatically and that the chilled side's gaskets close fully, so neither section takes in moist air.
- Cleaning: you will clean two interiors on different schedules. Removable shelves and gaskets, plus coved corners, make both easier.

Convertible Reach-in Refrigerator or Freezer
A convertible reach-in is an upright cabinet whose controller can be set to run it either as a refrigerator, around +2 to +8 °C, or as a freezer at −18 °C or colder. The body, insulation, door heaters and refrigeration system are built for freezer duty, so the cabinet can hold either band. The value is flexibility over time. A kitchen whose menu, season or business mix changes can repurpose the cabinet instead of buying another one. It also lets a group standardise on one cabinet type across outlets and set each one to suit the site.
Best for
- Restaurants with seasonal menus, where frozen stock rises for some months and chilled stock for others.
- Caterers and banquet kitchens whose needs swing with the event calendar.
- Restaurant groups that want one cabinet type and one set of spares across all outlets.
- New businesses that are not yet sure how their chilled-to-frozen mix will settle.
Check before you buy
- Switching takes planning: empty the cabinet, change the setting and let it reach the new temperature before loading. Going from chilled to frozen takes several hours, so switch at a quiet time.
- Labelling and logs: mark clearly on the door which mode the cabinet is in. Record it in your temperature log. FSSAI-style hygiene checks look at whether storage matches the food in it.
- Ambient and power: the system is sized for freezer duty, so check the rating at your kitchen temperature and give it an earthed 230 V socket with voltage protection. In refrigerator mode it has spare capacity, which helps with fast recovery.
- Humidity: in the monsoon, switching from freezer to refrigerator mode leaves a lot of meltwater. Defrost fully, wipe the interior dry and check the drain or evaporation tray before you reload.
- Cleaning and service: one cabinet type across sites makes cleaning routines and technician training simpler. Ask about access to the condensing unit and gaskets.
