Chef Base Refrigerator: Cold Storage Under the Grill

A chef base is a low refrigerated cabinet, usually with drawers, designed to carry countertop cooking equipment on its top: griddles, charbroilers, salamanders, induction hobs or small fryers. It is shorter than a normal undercounter, so the equipment on top ends up at a comfortable working height. The top is reinforced to carry the weight and insulated to stop the cooking heat soaking into the cabinet. The result is raw proteins and ingredients held at chilled temperatures directly below the point where they are cooked. The cook can pull, cook and plate without taking a step.

Best for

  • Grill and griddle stations in burger, steak and continental kitchens.
  • QSR lines where patties, chicken and buns move from cold drawer to hot plate in one motion.
  • Live counters and show kitchens in hotels where the cook stays at the station for the whole service.
  • Compact kitchens that want cooking equipment and chilled storage in the same metre of line.

Check before you buy

  • Equipment match: list the exact equipment that will sit on top, with its width, weight and heat output, and confirm the chef base is rated for it. Equipment should not overhang the edges.
  • Heat and ambient: a chef base works in the hottest spot in the kitchen, with cooking heat above and 43 °C air around it. Ask for its ambient rating and how the top is insulated, and keep the front grille clear of grease.
  • Gas and electrical routing: plan how gas lines and cables reach the equipment on top without running across hot surfaces or the cabinet's air intake.
  • Drawer loads: drawers are pulled constantly at a hot station. Check runner quality, pan sizes and whether gaskets can be replaced quickly.
  • Cleaning: grease migrates down. Wipe the drawer fronts, gaskets and grille daily, and degrease the condenser area regularly, or cooling will drop off within weeks.
Why is a chef base lower than a normal undercounter?
So that the equipment placed on top, such as a griddle, ends up at a normal working height. If you put a griddle on a standard-height counter, the cooking surface is too high to work comfortably.
Can a chef base hold food at a safe temperature right under a hot grill?
A well-designed one can, with an insulated top, adequate refrigeration and a clear front grille. Check drawer temperatures with a probe during a full service, especially in summer, and log them.
