Comparison

Back-bar cooler vs Underbar refrigeration

Bars need cold storage in two places. Back-bar coolers sit along the wall behind the bartender, facing customers, often with glass doors that show bottles and cans. Underbar refrigeration sits beneath the front counter on the bartender's side, out of customer view, and is built for fast, repeated access during service. The names are sometimes used loosely, so it helps to think about where the unit sits and who it is for. In Indian bars, where back areas are often small and warm and the bar may not be air-conditioned until opening time, the location also decides how hard the unit has to work.

Choose back-bar cooler when…

  • You want guests to see the range of bottled beers, soft drinks or mixers.
  • You need bulk cold storage for bottled drinks close to the bar.
  • Your bar has wall space behind it and you want a display surface on top.
  • Presentation is part of the brand in a hotel, café or lounge bar.

Choose underbar refrigeration when…

  • Bartenders need the most-used items within one step during peak service.
  • The back wall is taken by shelves, a coffee machine or a mirror display.
  • You serve mainly mixed drinks, mocktails or draught and need garnish and juice storage.
  • You want cold storage hidden from guests.

The verdict

Most bars that serve a mix of bottled and mixed drinks benefit from both: a back-bar cooler for display and bottled stock, and underbar units for speed at the station. If you can only fit one, decide by what you sell most: bottled drinks favour a back-bar cooler, mixed drinks favour underbar refrigeration. In either location, front-breathing units with clear airflow paths are essential, because joinery and warm spaces under bars are where many refrigeration problems start. Also plan for restocking: back-bar coolers are usually refilled before service, while underbar units are topped up during it, so place them where staff can reach the store room without crossing the guests' path.
