Commissioning goes beyond plugging in. For a self-contained cabinet, it typically includes checking the unit for transport damage, positioning and levelling it, confirming ventilation clearances, checking the supply voltage, earthing and socket rating, letting the refrigerant settle if the unit was tilted, running it to temperature, setting the controller and alarms, and showing staff how to operate and clean it. For remote systems and cold rooms, it also includes pressure testing, evacuation, refrigerant charging and checking system pressures and temperatures.
A commissioning record should note the date, readings taken, settings, any issues found and who signed off. That record helps with warranty claims and provides a baseline for future service. The unit should usually be run empty until it reaches and holds its setpoint before food is loaded.
A new café in Bengaluru receiving a pastry showcase, two undercounters and a visi cooler might have the supplier's technician commission all four on one visit, check the shop's wiring and stabilisers, set temperatures and train the staff on daily cleaning before opening day.
